Homemade Granola
A few months ago, I set up a Farmer's Market stand selling some homemade granola that I personally thought was quite delicious (and thankfully learned that the people thought so too!)
The thing about store bought granola is that it is most often packed with sh*t.
Artificial flavors, SUGAR, chemicals, oh my?!
These 3 things alone are slowly but surely increasing inflammation in your body and sending you on a blood sugar roller coaster.
It is tough out there on the cereal aisle.
And now that I've scared you, you're probably thinking “but what do I put on my yogurt?!!!”
This homemade granola takes 20 minutes to make, has a protein, carb, and fat to keep the blood sugar from spiking, and will give you peace of mind with all clean ingredients.
Before I give you the recipe, I do want to give credit to the original mastermind of this trusty, wholesome snack. Every once in a while I dig back into my own health coaching archives to find some recipes that I can't let go of. This is one of them, and was made by my own former health coach who no longer works in the industry, but her clean recipes still hit. I added a little fall flair to hers and I hope you enjoy it!!
BLOOD SUGAR FRIENDLY GRANOLA
Ingredients:
1 ½ cups GF Oats
½ cup shredded coconut
½ cup chopped nuts
¼ cup pumpkin seeds
2 servings vanilla protein powder (I love the brand Ancient Nutrition)
8 chopped dates
¼ cup maple syrup
¼ cup coconut sugar
¼ cup melted coconut oil
⅓ cup nut butter (cashew, pb, almond)
½ tbsp vanilla
½ tbsp cinnamon
½ tbsp kosher salt
Instructions:
Preheat the oven to 375 degrees.
In a large bowl, mix together all of the dry ingredients and make sure it is all evenly coated.
Add in the wet ingredients
Spread out evenly on a sheet pan and cook for 10 minutes.
Take out and break apart. Put back in for 3 more minutes.
Let cool and then break into pieces.
